  • 1 1/2 oz Mount Gay Barbados rum
    1/2 oz Grand Marnier orange liqueur
    4 - 5 lime wedges

    1 tbsp sugar

Muddle the mint leaves and lime wedges with cane sugar and Grand Marnier orange liqueur in a cocktail shaker. Add crushed ice and pour in the Mount Gay Barbados rum. Using a swizzle stick, stir the ingredients together so that the rum, lime and mint layers through the drink. Top up with apple juice. Serve with a mint garnish.

Fruit Cooler Recipe

Ingredients



  • 1 can frozen apple juice concentrate
    1 cup sliced strawberries
    2 tbsp sugar
    1 lemon
    1 apple
    1 liter soda water
    ice




Toss strawberries with sugar, and let sit overnight in refrigerator. Cut lemon, reserve two slices. Juice the rest. Mix together the lemon juice, strawberries, apple juice, and soda water.     2/3 oz Galliano white sambuca

Fill 2/3rds of a shot glass with white sambuca, and layer Kahlua down side of glass. Allow it to settle at the bottom. Drop in small amounts of advocaat and cherry advocaat. The advocaat will seperate giving the look of a brain.


Using a straw suck out half of the concoction, shot the remainder then immediately cup your hand over the shot glass, insert the straw between you fingers and suck out the vapours.

Ingredients



  • 3 oz chocolate mint liqueur
    1 oz Kahlua coffee liqueur
    1 tbsp maple syrup
    chocolate milk
    crushed ice
    1 1/2 oz whipped cream




In a blender, mix the chocolate milk, ice, and maple syrup for about 5 seconds. Then add the chocolate mint liqueur and kahlua, blending for another 2 seconds. Pour and top with whipped cream.

Ingredients



  • 1 oz dry vermouth
    1 oz apricot brandy
    1 oz gin
    2 tsp cherry brandy
    1 tsp lemon juice




Pour vermouth, apricot brandy, gin, cherry brandy and lemon juice into a cocktail shaker half-filled with ice cubes. Shake and strain into an old-fashioned glass almost filled with ice cubes, and serve.

  • 1 oz Appleton Estate V/X Jamaican rum
    3/4 oz Dubonnet Rouge vermouth
    1/2 oz caramel liqueur
    1 oz passion-fruit puree
    2 oz sugar cane juice
    3 dashes Fee Brothers peach bitters
    1/2 oz overproof rum




First take slices of pear and place them on a saucer, pour on raw sugar, douse in the overproof rum, and light. When caramelised this will become the drink garnish.


Pour the rest of the ingredients into a shaker, shake hard and fast and strain over crushed ice into a highball glass. Serve.

Gables Collins Recipe

Ingredients



  • 1 1/2 oz vodka
    1 oz creme de noyaux
    1 tbsp lemon juice
    1 tbsp pineapple juice
    club soda




Shake with ice and strain into a collins glass over ice cubes. Fill with Club Soda and garnish with a slice of lemon and a pineapple chunk.
